You asked some really great questions and hopefully raised awareness about the influence and power the consumer has on agriculture.  Niman Ranch actually keeps many of the traditional family farms in business by paying them a premium for their livestock.  This actually reflects the true cost of raising the animals humanely and naturally outdoors.
